This recipe is absolutely delicious! If you like chicken, you’ll love Tarragon Chicken! I’m fortunate to work at a golf course, and the kitchen staff is always making new stuff, so I get a lot of recipes from the chef to try out at home. I made this recipe for Valentine’s last week, and it turned out so well I made it again last night. The best part about this recipe, is it`s really easy!
Ingredients:
2 skinless boneless chicken breasts
Salt & pepper to taste
1 Tbsp oil
1 to 1.5 Tbsp of finely chopped red onion
2 Tbsp of white wine
pinch of tarragon spice
pinch of parsley
4 tbsp of heavy cream (35%)
2 tbsp water
Directions:
Pre-heat oven to 400ºF. Heat oil in frying pan. Salt & Pepper chicken and sear both sides in hot oil (about 1 minute each side). Cook chicken in oven until juices run clear.

In frying pan, heat white wine over medium, add onions and simmer for 2-3 minutes to reduce some of the wine and cook the onions. 
Add tarragon and parsley spice and mix.
Add water and heavy cream, mix and cover with lid. Cook 5 minutes, stirring occasionally. Reduce heat to lower and continue to cook for another 5 minutes. Pour over chicken just before serving.
